Can I seek restitution for back pay for my dad's escalated level of care by suing his estate?

Generally speaking there is no right for family members to recover the value of services provided to a loved one. The thought is that the services were provided from love and affection. Which no doubt is true, but tell that to your retirement fund...
The only way you can recover is if there was a written contract for services. Which, based on my reading of your email, I highly doubt. Unfortunately, shaming is not an excuse not to have a written contract.
I think you are out of luck. And in Michigan you would be... in The People's Republic of Vermont, however, the rules may be different... consult with local apparatchik to find out.
This is not legal advice. I am not your lawyer. You are not my client. You cannot rely on my response to your question. My response to your question is probably worth exactly what you paid for it. You don't get to sue me for anything. If you'd like to sue me, well you have to hire me first.
